Pumpkin Muffins with Cream Cheese Frosting

Yum, tastes like a cupcake, but called a muffin meaning you can eat it for breakfast :)


Pumpkin Muffins
Modified from Taste of Home

Ingredients:
2-1/4 cups all-purpose flour
3 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
2 cups sugar
1 cup canned pumpkin
1/2 cup canola oil

Directions
 In a large bowl, combine the flour, pumpkin pie spice, baking soda and salt. Beat the eggs, sugar, pumpkin and oil; stir in dry ingredients just until moistened.

Pour in 24 greased or paper-lined muffin cups.

Bake at 350 for 20-22 minutes or until a toothpickcomes out clean. Cool 5 mintues before removing from pans to wire racks.

FROSTING:
4 ounces cream cheese, softened
1/4 cup butter, softened
1 teaspoons vanilla extract
2 cups confectioners' sugar

Mix well and frost cooled muffins.


I love to freeze them, who needs 24 at one time? You can freeze them up to 2 months and they still come out as moist and as delicious as day one!

The things kids say

During baths today I brought the computer into the bathroom to multitask...Baby was on the rug, my Dolly was in the tub, She's 3 so although in the room, I don't have to keep my eye on her every second. She was asking questions and I kept agreeing. Finally she said,
D: how can you see what I'm talking about when you are looking at the computer?
(oops, I was caught not looking!!)
Me: I have eyes on the back of my head
D's eyes grow HUGE!
M: they are magical eyes so that I can see what you are doing
D: do I have eyes on the back of my head?
M: nope
D: why not?
M: only mom's have these magical eyes
wait a few minutes
D: Does daddy have these magical eyes?
I love the way little minds work :)

Block Puzzle

This was such a fun project to make with the kids.

Supplies:
6 - 2x2 cubes
6 - pictures
Mod Podge

Who doesn't love Mod Podge?

For our project my husband cut a 2x2 into cubes. But remember, a 2x2 isn't really 2"!! HA! meaning I had to cut all my pictures down a little :)  If you have blocks at home for your kiddo's, those would be super easy to use.


Cut each picture into 6 pieces to fit on the blocks
Layer on a coat of Mod Podge
Place a picture on the block. Let dry a few minutes
Cover with Modge Pod and let dry!


Let the kids play and have fun with their favorite photos!

Lemon Cookies

Last week I mentioned these Chocolate cookies from Lil Liz-bits, well th kids wanted to make somethin, we didn't have much on hand (grocery store run necessary!) so we made Lemon Cookies. I wasn't sure if my kids would eat he lemon, but the loved them!


Lemon Cookies
1 box of cake mix
2 eggs
3/4 cup shortening
Powdered Sugar (I only used 2-3 large spoonfuls)

Preheat Oven to 350. Mix the cake mix, shortening an deggs together


until well combined


Roll into 1" balls and roll balls in powdered sugar


Bake at 350 degrees for 12 minutes. Take out and leave on the cookie sheet for 5 minutes. Move to wax paper and let cool

YUM!
